CHICKEN SPAGHETTI
CHICKEN SPAGHETTI
as found in the book “OPERATION VITTLES COOKBOOK”
Today, we are making MARY R. TEXLOK’s contribution: CHICKEN SPAGHETTI. The recipe is simple but very rich and highly decadent but VERY easy to make.
Please note this recipe will serve a large group or large family. It does call for two packages of spaghetti noodles.

1 chicken (5 – 6 lbs)
1/2 cup olive oil
2 large onions (chopped)
2 cloves garlic (chopped)
1/2 cup hot water
1 No. 2 1/2 can tomatoes (approx. 29 ounces)
1 can tomato paste (or: No. 2 can tomato juice)
2 tablespoon sugar
1 lbs fresh mushrooms (or: 3 small cans)
3 tablespoon Butter
1 cup red wine
2 packages thin spaghetti
grated cheese (Parmesan preferred)

Cut chicken for frying
Divide each breast and leg into 2 pieces
Heat oil in frying pan, then add onion and garlic
Brown chicken pieces well, and put in deep kettle
Pour water into frying pan and pour all over chicken
Add tomatoes, tomato paste and sugar.
Cover and simmer 2 or 3 hours
20 minutes before serving: fry mushrooms in butter for 10 minutes
Add mushrooms and wine to chicken.
Boil spaghetti, drain.
Serve with cheese
